Broccoli & Bell Pepper Stir-Fry

Ingredients:

  • 1 head of broccoli, cut into florets

  • 1 red bell pepper, sliced

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 tablespoon low-sodium soy sauce (optional)

Instructions:

  1. Heat olive oil in a pan over medium heat.

  2. Add minced garlic and sauté until fragrant.

  3. Add broccoli and bell pepper, stir-frying for 5-7 minutes until tender.

  4. Drizzle with low-sodium soy sauce if desired, and serve with brown rice or quinoa.

Romaine, Apple & Pear Salad

Ingredients:

  • 1 romaine heart, chopped

  1. Blend banana, baby carrots, and almond milk (or coconut water) until smooth.

Instructions:

  • 1 tablespoon honey

Instructions:

  1. Combine diced apple, sliced banana, and halved grape tomatoes in a bowl.

  2. Drizzle with lemon juice and honey, and toss gently.

  3. Serve immediately.
